Here’s the thing—I’m a sauce girl. A Sauce Girl™, if you will. If a recipe doesn’t have sauce? I want sauce. I’m adding sauce. Sauce deserves to be here. And these viral kebab rolls? Oh my good golly, I want to drink the sauce, add it to my 6-step skincare routine, introduce it to my parents.

But let’s not lose focus. The real star here? The crispy, tender, savory, heavily flavorful kebab rolls.
It’s like… a doner kebab, but rolled into a spiral and roasted that way. A bit of the fat from the meat infuses into the tortillas, making them crispy and utterly satisfying. The meat mixture itself is seasoned into oblivion, using premade shawarma seasoning to get you halfway there, and plenty of fresh ingredients, like lemon zest, garlic, and parsley, fully deliver.
Also, they’re served on a stick, and food on a stick is inherently way more fun than food that’s not on a stick. Just ask me my kids.

Viral Kebab Rolls
shawarma-spiced beef rolled into crispy pinwheels and broiled until the edges char — with a garlicky yogurt sauce you’ll want on everything
For the kebabs
1½ lbs 85/15 ground beef
2 tablespoons shawarma spice blend
1 tablespoon tomato paste
½ teaspoon smoked paprika
¼ teaspoon cinnamon
¼ teaspoon cumin
1 teaspoon garlic powder
1 teaspoon lemon zest
2 tablespoons finely chopped flat-leaf parsley
1½ teaspoons kosher salt
½ teaspoon black pepper
4 large (10-inch) burrito-size flour tortillas
For serving
1 cup plain Greek yogurt
2 tablespoons tahini
2 tablespoons fresh lemon juice
1 garlic clove, grated
1 tablespoon chopped fresh dill
1 tablespoon chopped flat-leaf parsley
½ teaspoon kosher salt
In a large bowl, combine the ground beef, shawarma spice, tomato paste, smoked paprika, cinnamon, cumin, garlic powder, lemon zest, parsley, salt, and pepper. Mix until just combined — don’t overwork it.
Lay a tortilla flat. Spread a thin, even layer of the beef mixture almost to the edges, leaving a ½-inch border. Roll tightly from one end to form a log, then thread a skewer lengthwise through the center. Repeat with the remaining tortillas and beef. Place on a sheet pan and refrigerate for 15 minutes — this is the step that keeps them from unrolling under the broiler.
Meanwhile, whisk together the yogurt, tahini, lemon juice, garlic, dill, parsley, and salt. Refrigerate until ready to serve.
Set your oven to broil on high with a rack about 5 inches from the heat. Broil the rolls for 8–10 minutes, turning once halfway, until the outside is charred in spots and the beef is cooked through. Let rest for 5 minutes before slicing into pinwheels. Serve with the yogurt sauce for dipping.
