Slow Cooker Yucatan-Style Chicken (Cochinita Pibil)

The Chicken

  • 2½ lbs boneless, skinless chicken thighs

  • 1½ tsp kosher salt

The Sauce

  • 3 tbsp achiote paste (any Latin grocery has it, or grab it on Walmart’s site)

  • ½ cup fresh orange juice

  • 3 tbsp fresh lime juice
