We just got our soccer tournament schedule and our tennis schedule. If my life were a Venn diagram, there’d be like, no single-variable crescents, all overlap. Just one question: How..? How am I..? Wait, no, I can do this. But wait… how?
Recipes like this? That’s how.
Absolutely minimal effort, maximum flavor, and great leftovers. Versatile, too, so the kids don’t have to eat anything green, but can take the juicy, flavorful chicken and pop it into Chicken Nugget Kid™ tacos with melty cheesy—everything beige, just how they like it.
But me? No, no. Me, I’m taking a secret with me to soccer practice. You’d never suspect that inside my insulated bento box is a bowl of yellow rice, topped with smoky, tender chicken, smothered in a creamy cilantro-jalapeño sauce. You might suspect it once I start actually guzzling said sauce and it drips down my mom uniform (Yoga pants, workout tank, EVA birkenstocks, baseball cap).
But worry about yourself, OK? I’ve got Tide wipes in my purse (and baby wipes in case your kid needs to poop in a Porta Potty, and individually wrapped Pepcid in case you get a tummy ache), so it’s fine. Judge not, and whatever.
Back to this Peruvian chicken. I shot a grill version recently for my cookbook and had to ask myself if a slow cooker version even made sense, because I just love the flavors but needs as much of a hands-off method as I can get during the school year. And I’m so glad I tried it, because it works so, so well.
Why you’ll love this: This recipe takes like 10 minutes of active prep time (which is literally just tossing and blending) and only 2ish hours on high (and 4 on low) in a slow cooker. We do not overcook our chicken here, so no excessive Crockpot times from me. Your slow cooker should keep the chicken warm until you’re ready.
The flavors: The chicken itself? Packed with flavor, thanks to a powerhouse blend of spices. And there’s loads of smoked paprika, helping the chicken shortcut a little of that smokiness you’d get from the grill.
The sauce: Oh mama, mama, mama. I fell in love with aji verde years back and haven’t looked away since. It’s cool and fresh, thanks to the cilantro, with a nice heat from the jalapeños. The lime juice brightens it up just enough, and the mayonnaise gives it the perfect creaminess. Cannot get enough. I keep some in my fridge almost all the time; it turns just about any easy, ready protein into a meal in the drizzle of a spoon.
Perfect for: A busy weeknight when you need something delicious but low maintenance. Entertaining when you’d rather hang with your guests than babysit chicken thighs on a grill.
What to serve it with: Yellow rice is a natural choice, but any grain (or grain-like) base will do. Roasted potatoes are great, or yuca fries! Avocado salad, or a green salad topped with a little aji verde-spiked ranch or creamy dressing. Delish.
Storage: Keep the chicken in an airtight container for up to 6 days or so. Keep the aji verde in a separate airtight container for even longer!

Crockpot Peruvian Chicken with Aji Verde
Tender, juicy chicken thighs slow-cooked in bold Peruvian spices, served with a zippy, creamy green sauce you’ll want to put on everything. This recipe is a total weeknight miracle—minimal effort, maximum flavor, kid-friendly, perfect leftovers.
For the Chicken
2 pounds boneless, skinless chicken thighs
5 cloves garlic, minced
2 tablespoons lime juice
2 tablespoons oil (olive, avocado, or vegetable all work)
1 tablespoon ground cumin
1 teaspoon dried oregano
1 tablespoon smoked paprika
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
For the Aji Verde (Green Sauce)
4 jalapeños, halved (remove the seeds if you want less heat)
2 cups cilantro (loosely packed, stems mostly removed—don’t obsess)
½ cup mayonnaise
1 green onion, roughly chopped
3 cloves garlic, minced
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon lime juice
For Serving
Cooked rice or quinoa
Sliced avocado
Fresh cilantro
Lime wedges (optional, but so good and also a little fancy/plated feeling)
Let’s Make It
1. Marinate the Chicken (Optional, but worth it)
In a bowl, stir together garlic, lime juice, oil, and all the spices. Rub it all over the chicken thighs—get in there. If you’ve got the time, let it marinate in the fridge for at least 30 minutes or even overnight. The flavor payoff is big.
2. Slow Cook to Perfection
Pop the chicken and any extra marinade into your Crockpot. Cook on LOW for 4-5 hours or HIGH for 2–2.5 hours, until the chicken is tender and fully cooked. Just don’t overcook it—nobody wants hockey-puck chicken.
3. Make the Aji Verde
While the chicken’s cooking, blend all the sauce ingredients until smooth and creamy. Give it a taste and adjust the lime or salt if needed. Warning: you might end up eating this with a spoon.
4. Serve It Up
At this point, you can serve the chicken whole over fluffy rice, quinoa, potatoes, etc., OR shred it for bowls, tacos, burritos, etc. Spoon loads of aji verde over, sprinkle with a little extra fresh, chopped cilantro. Serve with lime wedges.
Chef’s Tip:
Make a double batch of the green sauce and stash it in the fridge—it’s magic on tacos, grain bowls, roasted veggies, or even as a dip for fries. Yes, yes, you’re welcome.
