Serves 4–6
Ingredients
Chicken
2 lbs boneless skinless chicken thighs, cut into 1½-inch chunks
1 tbsp olive oil
¾ tsp kosher salt
½ tsp black pepper
½ tsp garlic powder
½ tsp smoked paprika
3 tbsp cornstarch (this is the crisp factor)
Glaze
⅓ cup gochujang
¼ cup honey
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp cornstarch
¼ cup water
Optional for serving
Sesame seeds, sliced cucumbers, scallions
Rice or crispy rice
Instructions
Heat oven to 450°F. Line a sheet pan with parchment or well-sprayed foil.
Toss chicken with olive oil, salt, pepper, garlic powder, and paprika.
Sprinkle cornstarch over and toss until every piece looks dry and tacky — velvety, not wet.
Spread on the pan with space between pieces (crucial). Roast 18–22 minutes, flipping halfway. Chicken should be browned with crispy edges.
Whisk all glaze ingredients in a small saucepan. Simmer 2–3 minutes until thick, glossy, and spoon-coating. Too thick? Add 1–2 tbsp water.
Transfer chicken to a large bowl, pour glaze over, and toss until fully coated. Return to the sheet pan and roast 5–7 more minutes until caramelized and sticky. Optional: broil 1–2 minutes for extra char — watch closely.
